Easy eating this week:
3 veggies: Spinach, tomatoes, cucumbers
2 proteins: eggs and frozen shrimp
1 starch: sticky white rice
Behold, my two favorite kitchen tools this week: my egg poacher and my salad scissors (not to be confused with my dual blade choppers)!!

I‘ve been combining the ingredients in the photo above for quick meals. Chop the bejeezus out of a handful of spinach, then slice tomatoes and cucumbers and toss in with spinach; chop again. Add cheese and seasoning VOILA.

I will cook up a bunch of frozen shrimp on Sunday night and either toss in my salad OR add to rice and sriracha sauce with chopped cucumbers. Poached eggs may be added to both meals, I’m kinda obsessed?! I love my little microwave poacher from Amazon, it does 2 eggs in a minute.

That lentil salad looks amazing. I made a similar one with feta and pecans and spinach. I LOVE LENTILS
This is my current salad base go to. Or there’s also one with mainly carrots. I get burned out at times with regular salad. Then I add all the toppings like Coach mentioned. I have garbanzo or black beans ready for the week to be used also.
Here are my next 4 planned meals. Getting groceries today/tonight. I try to plan 2-3 meatless meals a week. the lentil salad is a new recipe but the rest are repeats that are very good!
